There is no way to leave email conversations if someone accidentally presses the "Answer All" button. What you can do is to mute the call on your side to turn off notifications. Here you can read how you can dampen threads on your iPhone, iPad or Mac using the Mail app.
Mute Mailthreads on iPhone and iPad
If you want to mute a thread on an iPhone or iPad, you must use iOS 1
There are two ways to do this. The first works without opening the e-mail. You can also mute a message from the reply menu.
When you are in the inbox, swipe left on an email and select the "More" option.
Tap the "Mute" button in the pop-up.
The e-mail now has a small "Call" icon to tell you that the thread has been muted.
If the e-mail is already open, tap the "Reply" button in the lower right corner.
Then slide a little down until you see the "Mute" option. Tap the button to mute the thread.
If you want to mute the thread later, follow the same process and tap the "Unmute" option.
Mute mail threads on Mac
Open the Mail app on your Mac with macOS Catalina, then select an email or multiple emails. top toolbar the "Call" icon and click on it.

You can also mute a conversation by right-clicking an email in the list view and selecting the "Mute" option.
 If you want to unmute a thread, click the "Mute" button in the toolbar again.
