In the days of coronavirus quarantine, it is likely that you arrived at the supermarket, only to discover that the baking section is completely empty of all purpose flour. That's definitely a bummer, since you planned a grocery run for the sole purpose of stocking up on baking supplies to make a batch of your favorite chocolate chip cookies.

"Going to the grocery store and not finding flour is a problem, of course, and you need convenience when trying to make cookies," he says. "Instinctively I was like, there are other things that have flour in the supermarket."

This thought process led him to the store's pancake mix department, which was rife with a huge assortment of brands. There are plenty of varieties – from keto versions to egg substitute variants – but Nathan recommends buying the base variety (he used Birch Benders), one filled with flour and a leavening agent that lends itself to those simple baking projects.

Once you have your pancake mix and a chocolate chip cookie recipe (this is the recipe that Nathan used), you just need to measure a ratio of 1: 1, so every cup of flour needed the recipe can be replaced with a cup pancake mix.

It's worth noting that while this is a great hack, the cookies come out a little differently than if you were to use plain flour. "All I noticed was [the cookies are] airier and more airy," says Nathan. & # 39; Do you know if you make a pancake and the first side produces all those bubbles? That actually happens in the oven, but boils it all around. & # 39; When you take the cookies out of the oven, you may notice a crisper outside with a soft inside, which honestly isn't too bad.

Do you have any other baked items you want to make? Nathan assumes that the pancake mix would probably work just as well in a brownie batter or pound cake. Test it out and let us know!
